Savory Oats and Fried Egg - Simple

10 minutes prep/cook time

Ingredients:

Oats

Water

Salt

Pepper

Hemp seeds

Oil for frying egg

Egg

-Start ¼ cup of oats cooking in ½ cup of water. Add a dash (okay, okay, a ¼ tsp) of salt and about a 1 T of hemp seeds. Bring to a boil and then reduce heat. Cook for a few minutes with the lid on. (If they start to stick, don’t panic. Just turn the burner off and leave the lid on for a minute.)

-Fry your egg to your liking (please at least leave the yolk a leettle runny? Please? Just for me?) Grind salt and pepper over the top.

-Place the egg on top and chopped it up so there’s yummy yolk running over everything!

Ingredients:

Oats

Water

Salt

Pepper

Hemp seeds

Oil for frying egg and sauteing veggies

Egg

Turkey sausage (cooked)

Kale

Mushrooms

Bell pepper

Shallots

Garlic

Avocado

Salsa

-Saute kale, shallots, garlic, bell pepper, and mushrooms in oil. Add sausage to heat through.

-Place cooked oats/hemp seeds in bowl. Top with sausage and veggie mixture. Cut ¼ -½ an avocado on top in small cubes.

-Place the egg on top and top with salsa.

Egg Bowl alternatives:

Can also use roasted potatoes as a base. Use spinach or broccoli as the veggie. Black beans, sour cream, fresh green or red onions, bacon, tri-tip, carnitas, garbanzo beans… This is great for dinner as well. We first came across the egg bowl idea in Redding, CA when on a road trip.
